Perfect for Fall: Pumpkin Spice Hot Chocolate

Technically, the first official day of fall isn’t until September 22nd this year, but in all fairness and because it’s my favorite season; I always deem September 1st the first day of fall. That means we have approximately a week and a half until college football, fall décor, the anticipation of pumpkin patches and the holiday season.

It also means that I will wake up that morning and it will feel like fall. Despite the fact that I live in Florida, our leaves don’t change and it’s going to be 105 degrees and humid. It doesn’t matter; any second after that, it could be fall. That’s why, in anticipation of the fall season – and because I’m impatient – I’ve decided today is a perfect day to discuss a must-make fall recipe.

Pumpkin Spice Hot Chocolate

It’s the kind of drink that makes you want to curl up with a good book and a soft blanket, wearing leggings and an oversize sweater while the kids nap and your husband rakes leaves (or palm fronds in our neck of the woods). The pumpkin spice hot chocolate is the perfect fall drink. You can have it on a cool fall night around the fire, or save it for a cozy weekend morning.

Ingredients

2 ½ cups milk

1/3 cup cocoa powder

¼ cup pumpkin

1 tsp. pumpkin pie spice

1 tsp. vanilla extract

Salt to taste

Cool whip

Making Your Fall Drink

Go ahead and start by mixing your milk, cocoa, vanilla and salt in a sauce pan set to medium heat. Mix for a few minutes until the mixture looks good and add both pumpkin ingredients. As the mixture warms up to a boil, stir constantly. When you think that the mix is warm enough for your personal preference, pour everything into pretty mugs (fall mugs from Crate and Barrel are my favorite), put some of that cool whip on top, add a marshmallow or two and even toss a little extra pumpkin pie spice on top for décor. Drink and enjoy.
