A Simple Pesto and Spinach Quinoa Recipe


Everyone loves quinoa and if you don’t, it’s because you haven’t tried it yet. It’s delicious, it’s simple and it’s good for you. It’s a great addition to just about any meal, and it’s so versatile you can do just about anything with it and make it amazing. That’s one of the reasons my family eats so much of it. We can make it so many ways we never feel as if we are eating the same thing over and over. One of our favorite quinoa recipes is a simple spinach pesto recipe. It doesn’t take long, it usually includes the things that we already have lying around the house and everyone in the house loves it. Did I mention it’s also good for you? Well, how about I share this decadent quinoa recipe with you and let you impress yourself and your family by making it at home.

What You Need

2 cups quinoa

6 cups spinach

4 tbsp basil pesto1/4 cup fresh parmesan

Salt and pepper to taste

To make this dish, you need only cook the quinoa as specified on the package. It’s already written out for you right there, which is what makes this dish so simple and amazing. If you want to add a bit of flavor to the dish, you can substitute the water in the instructions for chicken or vegetable stock.

Once you finish with the cooking of quinoa, you will just turn the heat down to just above low and just below medium and you will add the rest of your ingredients to the pot. You’ll want to stir the dish continuously until the spinach begins to wilt and the cheese is completely melted. All you do from there is remove the dish from the heat and serve it to your family. We like to add a bit of additional fresh parm to the top of the dish when served, because it’s always amazing.
