Having a get together or party is fun but thinking and brainstorming what you can fix to serve your guests is not. It is hard to find something that everyone will enjoy. My recipe for chicken salad and cheese ball are sure to be a hit with your crowd, no matter the age of your guests. Both these recipes are kid friendly as well as loved by the big people. Both recipes are my own unique creations and I am asked for the recipes for them time and time again.
To make this chicken salad, start by gathering your ingredients. You will need 2 cans of cooked chicken, 1 cup of light mayonnaise, 1/4 cup of pickle relish, 1/2 a package of Hidden Valley Ranch Dip, a dash of salt and pepper, 1 rib of celery chopped into tiny pieces. Drain chicken and separate with a fork into tiny pieces. Add in other pieces and stir. Serve chicken salad on split round rolls or croissants.
To make this cheese ball, gather your ingredients together. You will need 2 boxes of 1/3 less fat cream cheese, softened, 2 green onions cleaned and chopped up, 1 jar dried beef, 12 slices very thinly sliced ham, 1/4 tsp garlic powder, 1 cup thinly shredded mild cheddar cheese, 2 tsp. bacon bits. Use a food processor or similar tool to chop up the ham and dried beef. Combine all ingredients, reserving 2 tablespoons ham, beef and cheddar cheese. Work with your hands until all ingredients are combined and mixed thoroughly. Form into a round ball and roll in reserved ingredients. Can be served with any type of crackers.
With the chicken salad sandwiches and the cheese ball, you have the makings of good party food. You can add in chips and dip or a fruit or veggie tray with dip and you are good to go. Appetizers are always a hit because there is something for everyone.
