This recipe is one of my husbands two favorite suppers. I call it Mom’s Cube Steak because I got the recipe from my own Momma. It is a hearty, filling southern supper.
Mom’s Cube Steak:
Ingredients: 4 pieces cube steak, 1 small handful flour, 1 small handful Baking Magic, oil, salt, pepper, garlic powder, 1 can Campbell’s Cream of Mushroom Soup, 1 can water.
Did you notice the amount of some of the ingredients are not exactly precise? There is a reason for that…. In many country cooking recipes, you are given a way to measure them that is not conventional.
Directions: Preheat oven to 325 degrees. Coat bottom of skillet with oil. Turn pan on low to get oil hot. Mix flour with Baking Magic. Coat each piece of cube steak with flour mixture. Put in hot skillet and sprinkle with salt, pepper and garlic powder. Brown steak on each side but don’t cook all the way through.
Spray a 9 x 13 pan with cooking spray. Lay meat in pan. Take Cream of Mushroom Soup and Mix with one can of water in pan meat was fried in to combine with meat drippings. Heat till near boiling. Pour over meat and cover with aluminum foil.
Bake Cube Steak at 325 for 1 hour. Pairs well with mashed potatoes, rolls and a side vegetable.
I always make extra of this so we can have it the next day… or in case the family wants extra.

Chocolate Muffins Made Healthy:
Ingredients: 1 box chocolate cake mix, 1 regular size can of pumpkin, 1/2 cup of water, 1/8 cup oil.
Mix all ingredients together and bake at 325 for 23-25 minutes. These can be baked at the same time as the cube steak since they require the same oven temperature.
