Red velvet cupcakes are to-die-for; there is no denying this very simple fact. However, many people avoid making them because they assume they are too difficult, too involved to make. The truth is that you can make delicious red velvet cupcakes in a matter of minutes without actually even using a ton of ingredients. You can do this with a pre-mixed box of cake mix. The key is in how you cook them and the frosting that you use on top; all the cake mixes – homemade or store-bought – taste just the same. With that said, we’re going to share the most amazing and simple red velvet cupcake recipe you’ll ever taste with you. You’re going to make these and have your friends and family wondering if you actually had a professional baker do it for you. You can shake your head and say you made them yourself without giving away your very dirty little secret.
What You’ll Need
1 Box Red Velvet Cake Mix (Betty Crocker is the best)
1 lb cream cheese (soft)
2 sticks butter (soft0
4 cups powder sugar
1 tsp. vanilla
Strawberries
Bake the cupcakes as per the instructions on the back of the box. Subtract 2 to 3 minutes baking time from the recommended time on the box to ensure that your cupcakes do not overcook and that they remain just a little bit soft on the inside (don’t worry; they’re cooked fully).
Once they are done, remove them from the oven and let them cool completely. You cannot frost them when they are even a little warm.
To prepare your frosting you will beat all the ‘moist’ ingredients together in a mixing bowl. Once they are nicely mixed, you will begin adding a bit of the powder sugar at a time, mixing and adding until you’ve used it all. Once all the sugar is mixed it you will keep mixing until you get a fluffy whipped topping. Spread it over your cupcakes and add fresh strawberries to the top. Enjoy!
