A Chickpeas Recipe Your Whole Family Will Love

Eating a healthy, well-balanced meal is actually a lot easier than it sounds. In theory, it’s not difficult to consume healthy food in place of unhealthy food. In reality, no one has time to eat healthy food that must be prepared and isn’t handed to you through a window in a drive-thru. We’ve put so much pressure on ourselves to be everything, do everything and accomplish everything yesterday that we forget that we really do have to take time to treat our bodies correctly and care for ourselves. It won’t matter how much we accomplish today if we cannot physically move tomorrow. Our health is a priority, and that’s something you should consider even more of a priority if you have a family to feed. You are responsible for setting a good example and fostering a love of healthy eating in your own home. That said, we think you should add more chickpeas to your daily diet, so we have a delicious recipe that uses chickpeas your entire family will adore.

What You Need

1 pound gnocchi

1 tbsp olive oil

2 cups butternut squash

½ cup shallots (sliced)

2 cloves minced garlic

14 oz. veggie broth

2 tbsp currant

1 tbsp sage

Salt and pepper to taste

8 cups chopped spinach

15 oz. chickpeas

2 tbsp balsamic vinegar

In a medium pan over medium heat, heat your olive oil and then add your gnocchi. You want it to brown while stirring frequently, so you’ll need to allot approximately 6 minutes for this. Then you will move this to a large bowl and move on. The next step is to add a splash more oil to your pan and place your garlic, shallots and squash in the pan, mixing it frequently for two minutes before adding your broth, currants and sage. Sprinkle with salt and pepper and continue to mix. When the squash is almost fully cooked, add your spinach, gnocchi and your chickpeas to the mixture and let it cook around 2 minutes.

You will then remove this from the pan, put it in a bowl and sprinkle it with your balsamic vinegar. It’s best when served warm, so go ahead and dig in. Even the kids are going to love this kick and spice, and the wonderful flavor.
