20 Minute Pasta Recipe

At the end of a long day, trying to figure out what to feed your family is often more stressful than anything else; trying to find a meal that will please everyone and is healthy is not an easy task. Between work, school, kids, team activities, practice, housework and all the other things that keep women working at full speed every day, it is easy to run through the drive-thru and pick up something for dinner. However, a healthy meal is always better for the family and it provides the opportunity for everyone to sit down together and enjoy a meal. Even on your busiest days, this 20 minute pasta recipe is perfect; quick and easy and it is delicious.


3 chicken or turkey sausages
1 box penne noodles
1 container cherry tomatoes
1 cup spinach leaves
Oregano to taste
Salt and pepper

Start by putting on a pot of water to boil and adding the penne noodles to the pot. Cook the penne noodles until they are ready. They should be firm but soft to chew. While the noodles are cooking, toss three sausages – mild chicken or turkey sausage is healthy and delicious – into a pan with coated with cooking spray and let them cook through, flipping them when each side is thoroughly cooked. For the best results, cook the sausage on medium heat.

Open a small container of cherry tomatoes and cut each one in half, placing them into a pan. Cover the tomato halves with a light coat of extra virgin olive oil and lightly sprinkle them with oregano, salt and pepper to taste. Allow the tomatoes to cook until they become soft, adding a cup of spinach leaves to the tomatoes with approximately three minutes left to cook.

Drain the noodles when they finish cooking, and place them in a bowl. Add the tomatoes and spinach to the noodles. Cut the sausage into bite size pieces and add to the mix; mix well. Hand everyone a bowl and help yourselves to a delicious, light meal that is far healthier than a trip through the drive-thru.
