Crock Pot Chicken Cacciatore is a recipe that makes its way to our table again and again. I think most mothers would agree that it is difficult to find a meal that everyone likes and this one is a hit with my family.
Crock Pot Chicken Cacciatore:
Ingredients: 2 tbsp. olive oil, 1 lb. chicken breasts, salt & pepper, 1 onion and green pepper each, 1 can diced italian tomatoes, 1 can tomato sauce, 1/4 tsp. parsley and garlic powder each,
Directions: Brown chicken in olive oil, then cut up into bite size pieces. Use remaining oil to simmer vegetables 5 minutes. Place chicken and veggies in the bottom of the crock pot. Add spices, salt and pepper to taste. Cover with tomato sauce and diced tomatoes. Cook on high 6 hours, stirring occasionally.
Serve over your favorite pasta. We like to add garlic bread or french bread on the side. I often double this recipe so we can have leftovers for the following day.
Prep time: 20 minutes. Cook time: 6 hours. Serves 4.
This next recipe listed is a favorite as well. I take it to church each time we have a get together and I always take home an empty dish. It’s very chocolate-y.
Brownie Trifle
Ingredients: 1 brownie mix already prepared, 1 regular size tub Cool Whip, 1 bag mini chocolate chips, 2 cans Thank You brand chocolate pudding or equivalent.
Directions: After your brownies are cooled, you crumble half of the brownies as a bottom layer in your trifle dish or whatever dish you wish to use. Trifle dishes are my favorite for this recipe because you can see the pretty layers. Next, pour 1 can Thank You pudding and spread evenly. Pour half of Cool Whip after the pudding and spread evenly. Next, pour half a bag of mini chocolate chips on top. Repeat all layers. You will have a beautiful, delicious dessert when finished.
